Introduction

Rice bran oil is the oil extracted from the germ and inner
husk of rice.

Rice bran oil
contains a range of fats, with 47% of its fats monounsaturated,
33% polyunsaturated, and 20% saturated.

Rice bran oil is
rich in vitamin E, γ-oryzanol (an antioxidant that may help
prevent heart attacks), and phytosterols (compounds believed to
help lower cholesterol absorption), which may provide associated
health benefits.

The bran is
primarily comprised pericarp, aleurone and subaleurone layers of
kernel, and typically includes the embryo or germ and small
amount of starchy endosperm.
Processing and Technology

The technology on
refining rice bran oil is based on a novel refining process as
compared to the current technology and has technologically
commercial attractiveness through the better product profile

The rice bran oil
was refined to remove unsaponifiables, colour and pigments,
waxes, gums and free fatty acids by using dewaxing, degumming,
neutralization and bleaching.

CO2 is
used to separate high quality edible oil rich in bio-active
phytochemicals such as Oryzanol, tocols, sterols from rice bran
using varying pressure (300 to 500 bar) temperature (50-80oC)
mass flow.

The extraction
process starts with raw material preparation. Rice bran is first
screened. It is then heated by steam at temperature higher than
100 degrees.

In order to
obtain high quality refined Rice Bran Oil, the refining process
begins by reducing excess free fatty acid and then decreasing
the colour with activated clay.
Market

India has a potential of 1.5 million metric tones (MMT) rice
bran oil per annum and only less than 10% of it is exploited for
edible use for want of economical industrial process.

In the U.S., rice
bran oil is currently being used in up-scale snack food
production and various types of restaurants. Traditionally,
potato chips and even French fries have been fried in rice bran
oil throughout various Asian countries, such as Japan due to the
flavour and also the oxidative stability that Rice Bran Oil
offers.
