Introduction
- Guar gum,
also called guaran, is a galactomannan. It is primarily the
ground endosperm of guar beans.
- Guar gum
is more soluble than locust bean gum and is a better emulsifier
as it has more galactose branch points.
- Guar gum
retards ice crystal growth non-specifically by slowing mass
transfer across the solid/liquid interface.
- Guar Gum (Galactomanan)
is a high molecular weight carbohydrate polymer made up of a
large number of mannose and galactose unit linked together.
Production
- Guar
gum is extracted from the guar bean, where it acts as a food
and water store.
- The
guar seeds are dehusked, milled and screened to obtain the
guar gum.
- In
India the commercial production of Guar gum is normally
undertaken by using process of roasting, differential
attrition, sieving and polishing.
- To get
the best yield and harvesting results of guar seeds these
seeds are sown in sandy soils, in the regions like North
West India and some areas of Pakistan along with major
regions in the west.
Application

The largest market for guar gum is in the food industry.
In the US, differing percentages are set for its
allowable concentration in various food applications.
- Guar gum as a
thickener, stabilizer as well as a source of high
dietary soluble fiber (80 % minimum on dry basis) has a
variety of uses.

Guar gum powder can also be
used as fat substitute that adds the "mouth feel" to
fat.

Ranks First in the production of guar which is grown
in the North Western part of the Country Which
mainly includes the states of Rajasthan, Gujarat,
Haryana and Punjab.

Followed by Pakistan and US is the key producer of
Guar Seeds constituting approximately 80% of the
over all production.

demand for guar gum is still growing rapidly because
in addition to its indispensable role in lowering
serum cholesterol and glucose levels, it is also
considered helpful in weight loss programs.
