- Asafoetida (Ferula
assafoetida), alternative spelling asafetida, is the dried latex
(gum oleoresin) exuded from the living underground rhizome or tap
root of several species of Ferula, which is a perennial herb (1 to
1.5 m high).
- Asafoetida reduces the
growth of indigenous microflora in the gut, reducing flatulence.
- Ferula assafoetida is
an herbaceous, monoecious, perennial plant of the family
Umbelliferae, also called Apiaceae.
- Asafetida comes from
the milky sap of a giant fennel plant.
- Asafoetida grows wild
in most of Western Asia. The plant thrives, also, in continental
climates where the temperature goes to extremes.
- Plant regeneration in
Ferula assa-foetida L. (Asafetida), a medicinally important
vulnerable species, was achieved through the mediation of callus
derived from root, hypocotyl and cotyledon.
- Hing (Ferula alliacea)
and Hingra (Ferula asafoetida) are the two varieties of asafoetida
known and recognized in India. Compounded asafoetida powder/tablets
find use in India in culinary preparations for flavouring purpose.
- The technology is
available at CFTRI, Mysore. The technique for the preparation of
good quality compounded asafoetida provides retention of flavour
characteristics and longer shelf-life.
- Asafoetida is approved
for food use in the USA.
